This is a simple and tasty Chicken Salad Recipe made with a healthy, creamy Greek Yogurt-based dressing. You can use pieces of a precooked rotisserie chicken for this salad, or cook your own chicken thighs (or breasts). Dianne gives you step-by-step instructions to making this chicken salad, which includes adding of some tarragon – an aromatic herb that is one of Dianne’s favorites.
To make this Chicken Salad with Lemon-Yogurt Dressing, you will need:
♨ 1½ tsp Tarragon, dry
♨ 2 tsp Lemon Zest, grated
♨ 1 tbsp Lemon Juice, fresh squeezed
♨ 4-8 pc Chicken Thighs (or Breasts)
♨ ½ c Greek Yogurt, plain and low-fat
♨ 1 tbsp + 2 tsp Olive Oil
♨ 3 Plum Tomatoes, coarsely chopped
♨ 4 Scallions, thinly sliced
♨ 6 c (or more) Salad Mix (Romaine or similar)
♨ Garlic Salt and Pepper to taste
Serve it on any kind of salad mix (Dianne prefers romaine lettuce, but any kind you like will do!), and – enjoy!
