Shrimp Pesto Recipe with Brown Rice and Mushrooms

Dianne shares a simple way to make homemade pesto, which can then be used in her incredible Shrimp Pesto Recipe with Brown Rice and Mushrooms.
Pesto Shrimp Recipe
First things first – start by making pesto in your food processor. You can use pine nuts, or walnuts – either one will work just fine. Dianne gives instructions on how easy it is to make this at home:

Here are the ingredients:

♨ 2 cups fresh basil leaves
♨ ½ cup freshly grated Parmesan cheese (Romano or Reggiano will also work)
♨ ½ cup Extra Virgin Olive Oil
♨ 1/3 cup of walnuts
♨ 3 medium-sized garlic cloves
♨ salt and pepper to taste

The next step is to make the entire meal that uses your freshly made pesto, instant brown rice, shrimp and mushrooms. Here are the ingredients that you’ll need:

♨ 4 cups of instant brown rice, cooked in chicken broth
♨ 1 sweet onion
♨ 1 lb fresh, large shrimp
♨ 2-4 tbsp of butter
♨ 2-4 tbsp of coconut oil
♨ ½ lb mushrooms (white mushrooms or any other kind you like)
