Turkey Sandwich Recipe with PepperonciniThis was a signature sandwich at Dianne’s restaurant, Country Cottage Cafe. Now, she is giving out her secret to making this incredible Smoked Turkey Pepperoncini Sandwich, so that you can make it anytime you want – right in your own kitchen. Try it, and you will find it to be one of the most delicious sandwiches you’ve ever had!

Here is what you’ll need:

♨ Sourdough Bread, sliced (whole wheat, organic preferred)
♨ Vegenaise Mayonnaise
♨ 4-6 pc Smoked Turkey, sliced (nitrate-free preferred)
♨ Red Onion, thinly sliced
♨ Pepperoncini, chopped (plus a little bit of juice)
♨ 2-3 pc Monterey Jack Cheese, sliced
♨ Ranch Dressing
♨ Tomato, sliced
♨ Salt & Pepper

Dianne shares some great tips on keeping the sandwich together as you are cutting it, as it can be tricky to cut a thick sandwich in half, without making it fall apart.

Tomato Basil Pesto Pasta RecipeBased on Dianne’s incredible Homemade Basil Pesto Recipe (which can be found HERE – please use the first part of the recipe), this Tomato Basil Pesto comes out tasting so good, it will knock your socks off!

You can use it as a salad dressing, put it on chicken, or pour it over some Barilla PLUS pasta. Why use Barilla? Because it has a lot of protein in each cup of cooked pasta, which makes it a healthier option!

Here are the ingredients you will need (in addition to those used for making Diann’e Homemade Basil Pesto Recipe):

♨ 2 c fresh Tomatoes, chopped (organic preferred)
♨ 4 tbsp Balsamic Vinegar
♨ Garlic Salt and Pepper to taste
♨ Parmesan Cheese, freshly grated, to taste

Chicken Salad with Greek YogurtThis is a simple and tasty Chicken Salad Recipe made with a healthy, creamy Greek Yogurt-based dressing. You can use pieces of a precooked rotisserie chicken for this salad, or cook your own chicken thighs (or breasts). Dianne gives you step-by-step instructions to making this chicken salad, which includes adding of some tarragon – an aromatic herb that is one of Dianne’s favorites.

To make this Chicken Salad with Lemon-Yogurt Dressing, you will need:

♨ 1½ tsp Tarragon, dry
♨ 2 tsp Lemon Zest, grated
♨ 1 tbsp Lemon Juice, fresh squeezed
♨ 4-8 pc Chicken Thighs (or Breasts)
♨ ½ c Greek Yogurt, plain and low-fat
♨ 1 tbsp + 2 tsp Olive Oil
♨ 3 Plum Tomatoes, coarsely chopped
♨ 4 Scallions, thinly sliced
♨ 6 c (or more) Salad Mix (Romaine or similar)
♨ Garlic Salt and Pepper to taste

Serve it on any kind of salad mix (Dianne prefers romaine lettuce, but any kind you like will do!), and – enjoy!
